Pioneers aging wines and cavas under the sea since 2009
The Cala Jóncols hotel is a pioneer in Spain in the underwater aging of wine. The project dates back to early 2009 when, at a family breakfast with a good friend, it was decided to try submerging local wines to see how they would develop.
Bottles submerged at a depth of 17 meters for 9 months a year are accompanied to the bottom of the sea by professionals, providing nature with a biotope for the reproduction of living things and protection from their predators.
